Moisture in oil and coming out the exhaust.
A week ago I noticed a creamy coating on my dipstick and oil filler cap. Today I ran the truck and significant moisture was coming out of the tail pipe. After ten seconds or so, my hand was wet after holding it in the exhaust. I am hoping it is a head gasket and not a cracked block. When I pull the head, hopefully the head gasket flaw is easy to see. Is there a chance that any cracks in the block would be visible on the top of the block?

Cracks can be visible depending where they might be. I have seen cylinder walls crack in ways that are very hard to detect and other times can be detected with no problem. You will have to expect the worst and hope for the best and do a thoural inspection of the head and block when you pull the head. If you do not find anything at that point you will have to do a complete tear down and have the block magnaflux checked for light cracks.

Is your crankcase vent tube inplace on your oil filler tube?
Have you checked that your PCV valve is not stuck?
Did the water coming out of the exhaust pipe smell sweet like anti freeze?

Condensation? Maybe? Does the truck get run enough to burn off any condensation? Is there a small hole in the muffler to drain off any excess moisture out of it? If you were to drain the oil would it be milky? Hopefully you find something simple. If it is the head gasket make sure the head and block are flat with no etching in the fire ring area. Good luck.
