Canvas is cool & original. It is also ephemeral.
Good for hangar queens, not so much for trucks that get driven and parked outside.
Buy OD green Herculite and sew that up, it will last almost forever. It is essentially Vinyl covered Kevlar weave.
I've had it last many years in the nasty AZ sun.

I have just purchased the canvas for the cab from John Bizal. I don't have a trailer so you might check with him for this.

I don't know if Vintage Power Wagons sell them:

Other options:
New Life Canvas is perhaps the most well-known manufacturer. They also give options when ordering. Both canvas and vinyl.
A bit pricey in my honest opinion.

Beachwood is also another one with lot of expertise. Never ordered from them though. Both canvas and vinyl.

As stated by PoW, have in mind your place's weather, I would also add this independently of where the truck will be parked. Where I live I have a dedicated space to park it, but during summer UV-rays are though when going to the beach or wheelin' around.
My two cents.

I purchased my truck canvas from John Bizal @ Midwest and was very happy with the fit and finish of every part.
